Cultures all around the world have found ways to preserve food so that the fruits of their labour can be enjoyed over a longer period of time.
Each culture too has found ingenious ways to keep on enjoying food that comes in times of abundance, in the form of leftovers.
We Asians have our Fried Rice or Nasi Goreng; where leftovers from yesterday (or last week....or last year? (that's stretching it a bit :-)) are thrown in the mix to mingle with rice to create a full and delicious meal.
The British have their Bread Puddings.
Eurasians have their Debal's (Devil's) Curry, in which last night's Christmas dinner leftovers are resurrected and transformed into a delicious spicy curry dish.
What to do with leftover chicken wing/ satay etc etc. from last night's Barbeque?
Go Mexican Fusion!
Make scrambled eggs
Make Salsa (mix finely diced Tomatoes, Carrots, Cucumbers, Cilantro, Lemon/Lime Juice, Salt/Fish Sauce, Sugar (I like young mangoes))
Scrape the meats off the bones/ satay sticks...Dice/ Chop them.
Put all of them in a tortilla wrap or Taco shell
Good for Breakfast, Lunch, Dinner and anytime of the day.
