A Thai-Padang Mashup Dish
The kids wanted Thai Green Curry Chicken, but I was craving for Opor Ayam Padang. The kids got what they wanted, so did I...
Drove to the nearest supermarket to 'make' Thai Green Curry paste from scratch.
Grabbed a pack of Kampung Chicken (not sure whether they are 'organic' but definitely less fat and supposedly not fed with growth hormones).
Sauted (i.e. lightly pan fried/ 'Tumis' in Malay) the Green Curry paste. Added fresh coconut cream, kaffir lime leaves, lots of Thai Basil leaves, whole Birds-eye Chillies (Chili Padi) and brought to a boil. Added the chicken parts, Aubergene/ Brinjal and carrots. Salt and a bit of black pepper to taste.
Took out the chicken when they were half cooked...
And here is where the 'Padang' part of the dish comes in.
Grilled ('Panggang') the chicken in the oven because I do not have a charcoal stove at home.
The grilling caramelised the chicken skin infused with the green curry and coconut milk and gives the chicken a nice smoky taste.
(Will try grilling over charcoal next time, that would have been even nicer).
Returned the grilled chicken to the pot of Green Curry gravy.
