Not bad in terms of nutrition too.
Each 100g serving gives you about:
38 grams of carbohydrates (more than twice that of boiled potatoes of the same weight),
7 grams of protein (about 4 times that of boiled potatoes),
1.5 grams of fibre (about the same as potatoes), and
less than 1 gram of fats.
Other than eating it plain as a snack, I may try using them as a carbo accompaniment to a dish/ meal.
