This is my favourite thing to prepare (& eat) at barbeques, among the usual suspects of grilled meats/ sausages, satay and chicken wings.
I usually stuff the fish with aromatics such as Lemon Grass, Turmeric Leaves with Garlic and Ginger. Wrapping the fish in banana leaf adds more to the fragrance and flavour.
After a good grill over charcoal, I'd squeeze a lemon and generously spread mango salsa (young mangoes + tomatoes + lemon juice + cilantro (coriander leaves) + fish sauce + sugar) over it.
