Dendeng is a savoury sweet snack popular in Indonesia.
Bakwa is a similar sweet meat jerky Chinese snack popularly served during Chinese New Year.
Satay? Needs no introduction…
What do you call a snack that is a fusion of satay and dendeng/ bakwa? You get Dondang Sayang 🙂
The recipe (serves 1 :-)):
500g Minced Beef (20% fats)
The marinade (blended):
Lightly toasted and grinded dry spices: 1 tsp cumin, 1 tsp fennel, 1 tsp coriander
5 tblsp brown sugar, 1 tsp salt, 50ml sweet soy sauce, 1 tbsp tamarind paste, 1 large onion, 5 cloves garlic, 5 cm ginger, 2 stalks lemongrass, 5 chili padi/ birdseye chili, 2 tblspoon vegetable oil
Mix in the marinade to the minced beef, let them mingle for at least an hour.
Spread the marinated meat evenly in a lighly greaded crisper pan. Grill in the oven to dry out the meat for 20 minutes. Remove the excess oil in the pan. Turn the meat over and grill for another 5 minutes.
Let the meat cool down. Cut into smaller byte sized pieces and grill over charcoal to give the meat a smoky flavour.
Cool the meat pieces down and place in a glass jar.
